芋头淀粉改性方法及其应用研究进展

摘要

芋头淀粉丰富,但淀粉结构特性制约了其开发和应用,可改性便于利用。芋头淀粉改性方法主要有物理改性、化学改性、生物改性、复合改性,物理改性包括超声改性、湿热改性、微波改性,化学改性主要是改变脱水葡聚糖单元(AGUs)上C2、C3和C6三个游离羟基基团,酶法改性是破坏主链与支链的连接键,复合改性是采用多种方法联合处理以获市场要求的改性淀粉。综述了芋头淀粉改性研究进展,旨在为芋头淀粉改性研究和应用提供参考。
